Fluffy pancakes

This fluffy pancake recipe is perfect for a delicious and satisfying breakfast. The recipe is quick and easy to follow, requiring just a few simple ingredients. The pancakes turn out light and airy with a soft and fluffy texture. For a truly indulgent breakfast treat, serve them with your favourite toppings, such as maple syrup, butter, fresh fruit, or whipped cream.

  1. Sieve the flour into a large bowl and add the baking soda and granulated sugar. Mix with a wooden spoon
  2. Add the beaten eggs and vegetable oil to the dry ingredients and mix well.
  3. Add dashes of buttermilk to the pancake mix gradually, stirring with a wooden spoon or handheld whisk, until a smooth batter is formed.
  4. Leave the batter to rest for 15-20 minutes
  5. Heat a good non-stick pan to medium heat
  6. Add a ladle of the pancake batter onto the heated pan (the number of pancakes made at each time will depend on the size of your pan). Once consistent bubbles form on the surface of the pancake and the batter has risen, flip until both sides are golden brown.
  7. Serve fresh off the pan with a condiment of your choice

  • Greek yoghurt and berry compote/ fresh berries
  • Nutella and banana or strawberries
  • Biscoff spread
  • Creme egg (yes, allow it to melt on a pancake straight off the hob, and you've got a delicious dessert-style pancake)
