Spinach and basil pesto

Pesto is a classic Italian sauce made with fresh basil leaves, garlic, pine nuts, Parmesan cheese, and olive oil. While this combination is undoubtedly delicious, there's always room for experimentation in the kitchen.

In this recipe, we're taking things up a notch by adding a nutritious and flavourful ingredient - spinach! Not only does it bring a bright green colour to the dish, but it also adds an extra layer of flavour and nutrition.

A little twist on the traditional Pesto Alla Genovese by adding spinach to give it a bit more depth

Ingredients

Instructions

  1. Blend the fresh basil, spinach leaves and pine nuts in a blender
  2. Add the grated parmesan to the blender until thoroughly mixed
  3. Drizzle the extra virgin olive oil into the blender whilst it is still on until the pesto is to your desired consistency
  4. Add salt and pepper at the end to season to your taste

Notes

Store in a bowl with cling film pressed down (to remove air and prevent browning) and place in the fridge.
